The origins of pasta, a true speciality of Italian people, are inextricably linked to the tradition of wheat cultivation, which was already practised at the time of the Roman Empire. In particular, it was the colonies and southern Italy that saw pasta spread most rapidly. Normally, we tend to attribute the birth of pasta to Marco Polo's return from China in 1295. In reality, this mixture of cereals and water has been an indispensable element of Mediterranean gastronomy for several millennia. Generation after generation, the processing of wheat has undergone continuous improvements, involving milling, preparation of the dough and subsequent cooking.
Although there is still no single view on the birth and history of pasta, the first traces of a foodstuff similar to today's product date back as far as 1,000 BC. It was at that time that man began to abandon nomadic life, giving rise to the figure of the farmer, engaged in sowing and subsequent harvesting. It is believed that well before the coming of Christ, the Greeks and Etruscans invented the first types of pasta. It is no coincidence that around 1,000 B.C. the term 'laganon' was used to indicate a flat, large sheet of pasta, cut into strips. A century before Christ, it was Cicero and Horace who declared themselves 'greedy' for 'lagana', a flour flatbread cooked in water and without yeast. By using several strips, and overlapping them on top of each other, a kind of lasagna was obtained. The first written document to mention pasta was attributed to Apicius. In 'De re coquinaria libri', in fact, the filling of a 'lagana' is described. There are no records, however, relating to the period between 200 AD and the year 1000. However, it is probable that macaroni was born in Sicily (in Trabìa, near Palermo) at that time. This flour-based food, presented in the form of strings, was given the name 'itriyah'. It is no coincidence that Palermo today is known for the vermicelli di Tria. The Arab origins of the term 'itriyah' suggest that it was this very people, during the invasion, who brought pasta to Sicily. <3>The spread of pasta in Italy
A few centuries later, pasta producers began to spread to different parts of Italy, starting in Campania, Puglia, Tuscany and Liguria (a region whose dry and windy climate ensured perfect drying in the open air).
Gragnano, for example, was awarded the title of 'homeland' of durum wheat pasta in the 16th century. Even, two centuries later, the town's urban layout underwent changes to encourage the drying of what was known as 'macaroni'. It was Naples, in the 17th century, that started the spread of pasta as a 'mass' dish. Following a famine (resulting from population growth and Spanish taxation), the consumption of meat and bread declined and was replaced by pasta. The invention of the 'gramola', the press and the 'trafila' helped to lower the price, making pasta even more popular. It was also during these years that tomato sauce was born, and has been a favourite condiment for pasta lovers ever since.
Fresh pasta is certainly one of the jewels in the crown of Italian gastronomy. It is not only the shapes (from orecchiette to maccheroni al ferretto, from pici to gnocchetti and cavatelli) that vary from region to region. Even the 'composition', in fact, can be different, leading to the production of pasta to be cut, or to be stuffed with delicious fillings. Two processes are used to make the dough; if the first involves the use of eggs, the second is characterised by the presence of semolina and water.
If you want to prepare a basic dough with eggs following the original recipe for homemade pasta, proceed as follows.
First of all, keep in mind that for 6 servings you will need the following ingredients 400 g 00 flour 4 eggs salt to taste Start by placing the flour in a heap on the work surface, adding salt and breaking the eggs into the centre. Beat them with a fork and, a little at a time, incorporate the flour with your fingertips. Use the lower part of the palm of your hands to knead the dough. This will take a few minutes, during which you can sprinkle the pastry board with a little flour on several occasions. A spatula will allow you to remove any sticky dough. Continue your action until the mixture is perfectly blended and of medium consistency. Stretch the dough from time to time, and fold it back on itself to make it easier.Italian cuisine is famous for its incredible variety of pasta, and each region of the country has its own distinctive specialities. Let us now explore the different types of pasta found in each Italian region:
Piedmont: In this northern region, ravioli is a renowned speciality. Piedmontese ravioli are filled with meat, vegetables or cheese, and are often served with melted butter and sage.
Lombardy: Here we find the famous fresh pasta called 'pizzoccheri', made from buckwheat flour. It is usually combined with Savoy cabbage, potatoes, butter and cheese.
Veneto: The typical pasta of this region is 'bigoli', similar to spaghetti but with a rougher texture. It is often dressed with duck-based sauces or the ever-present ragù.
Emilia-Romagna: Considered the home of Italian pasta, Emilia-Romagna offers a wide range of shapes and types of pasta. Here we can find the famous tortellini, stuffed with meat and served in broth, as well as tagliatelle, thick fettuccine that are traditionally served with meat sauce.
Tuscany: In the Tuscan region, the star pasta is 'pappardelle', wide strips of egg pasta that go perfectly with wild boar or duck sauces.
Lazio: Here we find the queen of Italian pasta, 'spaghetti alla carbonara'. This iconic dish is made with spaghetti, eggs, guanciale (a kind of bacon) and Roman pecorino cheese.Campania: Campania is famous for its pizza, but also offers a delicious pasta called 'paccheri'. These are large, ridged tubes of pasta that go well with seafood sauces or meat sauces.
Sicily: In Sicily, the typical pasta is 'pasta alla norma', made with rigatoni or spaghetti, tomato, fried aubergines, basil and salted ricotta cheese.Apulia: The most famous Apulian pasta is 'orecchiette', which literally means 'little ears'. These are small, shell-shaped pastas that are often served with tomato sauce and strong ricotta cheese.
Sardinia: The traditional Sardinian pasta is 'malloreddus', a dumpling-shaped pasta served with sausage sauce or meat sauce.
Each Italian region has its own wealth of pasta types and unique culinary traditions. The diversity of shapes, fillings and seasonings makes Italian pasta a gastronomic treasure trove appreciated worldwide.
